Mofongo – GW Recipe Box

Mofongo is a traditional Puerto Rican dish that highlights the beautiful melding of European, African, and Indigenous cooking and culture. It’s easy to make yet incredibly delicious! Warning: Your friends and family will request you bring it to every get-together, share at your own risk.

Cook Time: 10 minutes
Servings: 6 friends

INGREDIENTS

  • 2 cups vegetable oil
  • 4 green, unripe plantains
  • 3 garlic cloves, mashed
  • 6 ounces chicharrón (pork rinds)
  • 4 teaspoons of olive oil

INSTRUCTIONS

  1. Peel and cut the plantains into 1 inch rounds, soak them in salty water for 15 minutes
  2. Heat oil in a frying pan or deep fryer to 350 F
  3. Drain, dry, and then fry the plantains until golden and tender; approximately 4 to 6 minutes
  4. Remove cooked plantains and allow to drain on paper towels
  5. In a mixing bowl or mortar add fried plantain, crushed garlic and pieces of chicharrón
  6. Mash and mix until all ingredients are well incorporated
  7. Shape the Mofongo into balls and serve hot

To make into a meal, stuff the Mofongo with shrimp and other seafood!
