Mofongo – GW Recipe Box
Mofongo is a traditional Puerto Rican dish that highlights the beautiful melding of European, African, and Indigenous cooking and culture. It’s easy to make yet incredibly delicious! Warning: Your friends and family will request you bring it to every get-together, share at your own risk.

Servings: 6 friends
INGREDIENTS
- 2 cups vegetable oil
- 4 green, unripe plantains
- 3 garlic cloves, mashed
- 6 ounces chicharrón (pork rinds)

4 teaspoons of olive oil
INSTRUCTIONS
- Peel and cut the plantains into 1 inch rounds, soak them in salty water for 15 minutes
- Heat oil in a frying pan or deep fryer to 350 F
- Drain, dry, and then fry the plantains until golden and tender; approximately 4 to 6 minutes
- Remove cooked plantains and allow to drain on paper towels
- In a mixing bowl or mortar add fried plantain, crushed garlic and pieces of chicharrón
- Mash and mix until all ingredients are well incorporated
- Shape the Mofongo into balls and serve hot
To make into a meal, stuff the Mofongo with shrimp and other seafood!
