Chocolate Soufflé – GW Recipe Box
Whether you plan to celebrate Valentine’s Day or not, you’ll adore the chocolatey goodness that is Chocoloate Soufflé. Enjoy by yourself or with a loved one!

INGREDIENTS
1/3 cup granulated sugar
2 tablespoons granulated sugar
5 ounces semisweet chocolate, chopped finely
6 large room temperature eggs, separated
1/16 teaspoon salt
2 tablespoons butter
Confectioners’ sugar, for garnish
INSTRUCTIONS
- Butter and sugar 6 small ramekins or soufflé molds
- Preheat oven to 375°F
- Combine chocolate and butter in a saucepan and melt over low heat (it is important not to burn the chocolate)
- Remove from heat once melted and whisk in the egg yolks, then pour into a large bowl
- Beat the egg whites with salt in a large bowl until stiff, glossy peaks form
- Gentle whisk 1/3 of the beaten egg whites into the chocolate, with a rubber spatula fold the remaining egg whites into the chocolate
- Pour into prepared ramekin/soufflé mold and level with a spatula
- Bake for 10-15 minutes until the soufflé has risen halfway above the top of the mold and is springy to the touch
- Dust liberally with the confectioners’ sugar and serve immediately
Soufflé has a reputation of deflating quickly, so serve immediately. Bon appétit!
